Sausage and Cabbage Skillet: Easy One-Pan Dinner in 30 Minutes

This sausage and cabbage skillet is the ultimate weeknight dinner solution. Smoky sausage, tender caramelized cabbage, and sweet onions cook together in one pan for a hearty, budget-friendly meal that’s ready in just 30 minutes. Whether you use kielbasa, smoked sausage, or Italian sausage, this simple recipe delivers maximum flavor with minimal cleanup.

Perfect for busy families, this comfort food classic combines affordable ingredients you already have on hand. The cabbage cooks down until silky and sweet while the sausage gets beautifully browned and crispy. Serve it with crusty bread, over mashed potatoes, or enjoy it as-is for a low-carb dinner that satisfies.

  • 1 pound smoked sausage or kielbasa, sliced into ½-inch coins
  • 1 medium head green cabbage (about 2 pounds), cored and chopped into 1-inch pieces
  • 1 large yellow onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • ½ teaspoon smoked paprika
  • ¼ teaspoon red pepper flakes (optional)
  • Salt and black pepper to taste
  • 2 tablespoons fresh parsley, chopped (for garnish)

  • Large cast iron skillet or heavy-bottomed pan (12-inch)
  • Sharp knife and cutting board
  • Wooden spoon or spatula

Instructions

  1. Brown the sausage: Heat a large skillet over medium-high heat. Add the sliced sausage in a single layer and cook without stirring for 3-4 minutes until golden brown on one side. Flip and cook another 2-3 minutes until browned on both sides. Remove sausage to a plate and set aside.
  2. Sauté the onions: Reduce heat to medium. Add butter and olive oil to the same skillet. Add the sliced onions and cook, stirring occasionally, for 5-6 minutes until softened and beginning to caramelize.
  3. Add the cabbage: Add the chopped cabbage to the skillet in batches if needed. Season with salt and pepper. Cook, stirring occasionally, for 8-10 minutes until the cabbage is tender-crisp and beginning to caramelize at the edges.
  4. Add garlic and seasonings: Stir in the minced garlic, smoked paprika, and red pepper flakes (if using). Cook for 1 minute until fragrant.
  5. Combine and finish: Return the browned sausage to the skillet, stirring to combine with the cabbage mixture. Cook for 2-3 minutes until everything is heated through and the cabbage is tender but still has a slight bite.
